Ever since I saw those in Sleepy Hollow (the series, not the movie), I got obsessed with finding the right healthy recipe.
Warning: those are pure temptation. You pop one in your mouth and they're so light you think – why not take a second one and a third... Getting my drift? Don't forget they're easy to freeze and then thaw. In a nutshell, it might be wise to set some aside for thawing right away or you might end up eating the whole batch ;)

Une de mes obsessions du moment pour le petit déjeuner – mon repas préféré. Pas le genre de chose qu'on trouve au supermarché du coin, évidemment, donc soit on fait sans, soit on a un Starbuck's en bas de son immeuble, soit on apprend à les faire et vous savez quoi? En fait, je m'en étais fait tout un plat pour pas grand chose. Et en plus, ces petits pains se congèlent très bien. Sortez les la veille au soir et mettez les au frigo.
American-style Scones

This is the best recipe I found. It comes from Sally's Baking Addiction. Yes, I know, I'm obsessed with that blog but you'd be too if you discovered you had a baking twin somewhere!
You can make 8 scones with it, either the same variety or different ones, in which case you won't make a single ball cut into pieces but individual triangles. Both are very easy to make.
My favorite varieties – which I listed here – are blueberry and cranberry and orange.
Poptarts

This recipe is on Sally's Baking Addiction. I mainly adapted it for additional fillings.
I know it seems long to make but it's so worth it and not difficult at all.
On the plus side, you can have virtually any filling you like and even make different one in the same batch like a different one for each day, for example. Just saying...
