Spinach cheddar dip

I first made this because I had leftover spinach leaves and hate to waste. Boy! That was a great idea. It's easy to make and can be served for dinner or for appetizers. Add pretzel sticks and you're in heaven! The recipe is very simple and needs no measuring.

Zucchini Crumble

I tried this recipe for one, as a side dish, but it can also be used as a vegetarian main course. I like the colors and the texture of the veggies as well as the rich smell of the olive oil and tomatoes coming from the oven. You can't go wrong with so many pluses!

Fried Green Tomatoes

Summer is coming through (hopefully!) and I found fresh green tomatoes at my local store so guess what? I made fried green tomatoes!

I had been wanting to do this ever since I watched that wonderful movie, back in… phew! Can’t remember! Anyway…

I basically used the same recipe I use for zucchini fries. I baked them so I wouldn’t have to fry them in a pan. They were so good! Sigh…

Baked Zucchini Fries

Crisps are nice. Fries are nicer. I'm not too keen on patatoes but these fries are downright addictive. Use them as a healthier option for a side dish with a burger.
