Navettes are individual French pastry bites from Marseilles with a delicate taste of orange blossom and looking like small boats, hence their shape. They're easy to make and can be kept in a tin box. Dunk them in your tea or coffee. They're delicious.
This recipe is adapted from La Pintade Aixoise. It will yield about 20 cookies.
1/4 cup water
1/4 cup sugar
1 cup flour
2 pinches salt
5 Tbsp butter, softened
1 tsp orange blossom or orange extract (I like orange extract better)
milk to brush
Pan boil the sugar with the water for 5 mn to make syrup. Set aside and let cool completely.
Mix the flour, salt and butter until it looks like sand.
Add the syrup and orange (blossom) extract. Do not overmix.
Refrigerate for 2 hours.
Roll the dough into pieces of about 2 inches each with your hands and set on a pastry sheet. Make an indentation lengthwise with a knife and brush with milk.
Bake 20 mn at 350°F or until golden on the sides.
