Cakes, cupcakes, mugcakes › Mugcakes
I use mug cakes in very different ways. Either you make them for breakfast on weekends. They seem quick and easy to make but you still need to spoon and mix and bake and let cool and I have no patience for that on weekdays. Or you can make them for a treat at night. Sort of like your milk and cookies made better.
The possibilities are endless of course but here are my favorite ones. I tested quite a few recipes and some looked good on the pictures but were really disappointing. The following are not.

Bread pudding mugcake (oven version too)

My grandmother used to tell me how bakeries would use leftover bread, croissants and fruit cakes to make pudding. I really don't see what's wrong with that! I love pudding and I love it when I have leftover bread or cake to make it. What triggered my craving this time was a cinnamon swirl and raisin bread that wasn't up to my expectations. I don't throw food away easily. I usually reuse it differently. The result was stunning for both versions.

Chocolate Chip Mug Cookie

If you've browsed this section, you've found a recipe I say gets close to cookies but not exactly so. It's because I was relunctant to use eggs in my mugcakes and was trying to find other options.
However, I kind of was forced to find one the other day.
My conscious mind was telling me it was far from reasonable because, let's face it, it's too rich. But my evil twin – the one who makes me crave way too many good things – was whispering in my ear I needed that recipe. I needed to use the yolk that was orphaned when I made Red Lobster Shrimp Cocktail and only used the white. Poor little yolk, left all alone and bound to perish if I didn't use it soon (like in the next 24 hours maximum).
So I finally gave in and found a few recipes and came up with this. Enjoy! It's yummy, heavenly, crunchy just so, and so, so very good you'll curse me for having you addicted too ;)

This is my newest obsession at night. It's crumbly. It's a little crunchy – just so. And it's healthy. As often, I used several recipes I browsed on the net and then created my own. You really need to try that one. And if you still need to be convinced, its warm, enticing smell will waft through the air and fill your heart with content. Food is so much more than filling one's belly, don't you think?

This one is sort of a cookie but not exactly so. If you want it crunchy then you need 2 Tbsp milk instead of 3.
