One slice of bread, diced (any kind of leftover bread you have will do and the best part of it is you can come up with very different recipes!)

2 tsp butterscotch

2 Tbsp applesauce

Yes, as you can see, no eggs. Not even with white bread. Applesauce replaces it just fine and it's healthier.

I used butterscotch because I love it and needed some sugar in my pudding. Applesauce is not enough. If you need to replace the butterscotch, use agave syrup for a healthier version or light brown sugar.

You can add raisins, especially if your bread contained some. Or diced apple. Or berries...

In a mug, soak the bread in warm milk. Leave on the counter for five minutes to soak. Press and remove the excess of milk. Add applesauce and butterscotch.

I freeze butterscotch in ice cube molds so I always have some at hand 'cos, let's face it, one can never have enough of that little wonder.

Bake 2 mn in the microwave and cool 2 to 5 mn before eating. Make more in a bowl and you have great breakfast! Make crème anglaise (custard cream), flavor it with butterscotch if you like and serve on top.

There's also an oven version to this bread pudding. Use the same intructions. Grease a mold. Any kind will do – individual molds or larger ones if you want to make it for more people. Bake for 20 mn at 350°F for about two thick slices of bread. Add time if you make a bigger loaf.

You can make it the day before. If it's in a bigger mold, slice your bread pudding and serve it with a pitcher of crème anglaise. Heavenly!
