I have to admit, not my very favorite biscuits but they're lighter than their sour cream version and very easy to make.
For 12 biscuits:
2 cups flour
2 Tbsp cornstarch (fat ones)
2 pinches salt
2 pinches baking soda
1 tsp baking powder
6 Tbsp cold, unsalted butter, cubed
1 cup buttermilk (milk whisked with 1 tsp lemon juice)
Mix the dry ingredients. Add the butter and beat with flat dough hook of the kitchenaid until evenly crumbly. Add the buttermilk. The dough will be sticky.
Knead on a dusted surface. Make one-inch thick circles and bake for 11 mn at 450°F.
Can be frozen and thawed a few hours at room temperature. Warm them about 20s in your microwave.
