Waldorf Salad

I love this salad. I usually buy more celery stalks than I need and wash them, dry them then dice them. They can easily be frozen in ziploc bags. Let them sit on the counter on a plate for a few minutes and use them in your salads. It adds flavor and texture.
For one person:
1/8 cup walnut or almond, broiled and broken into pieces
1/2 crisp apple, diced, with skin
1/2 rib celery, diced, leaves chopped
1/8 cup golden raisins
salad (optional)
dressing:
1/8 cup non fat yoghurt
1 tsp mayonnaise
1/2 tbsp parsley
1 drop of honey or 1/2 tsp brown sugar
2 tsp lemon juice
black pepper
Whisk the dressing and add to the rest of the ingredients 10 mn before serving.

LOVE this salad. I replace the celery with cranberries - so good !
