Berry Streusel Bars

This is a recipe I made following Sally’s Baking Addiction’s instructions. I did change a few things though, like the filling. Instead of using preserve, I used fresh fruit mixed with jam. Your choice! Anyway, when you have made these, you will need to make more. So addictive!
Bear with me. It’s a long story but it’s in fact very easy to make. Hey, I wouldn’t lie to you, right? ;)
For the crust, you’ll need:
½ cup butter, melted
¼ cup sugar
¼ tsp salt
1 cup flour, sifted, or maybe a little bit more if you think it’s too gooey.
Roll it on parchment paper in a rectangular mold or on a baking sheet. You may need to use one parchment paper on top as well so it’s easier and then remove it to bake the crust for 15 mn, 350°F.
For the filling:
¾ cup of berry preserve or fresh or unfrozen berries to which you add 2 Tbsp berry jam. I used all kinds of berries in my recipe and blueberry jam. It was awesome.
Spread on the crust.
For the steusel:
½ cup oats
1/3 cup light brown sugar
¼ tsp cinnamon
¼ cup butter, cold and cubed
Mix with your hands or the flat hook of your Kitchenaid until the butter is well mixed. Spread on the filling.
Bake for 30 mn or until light brown on the sides and the filling is bubbling. Cool 20 mn then chill in the fridge.
For the glaze:
1/3 cup confectioners’ sugar
1 Tbsp cream
½ tsp vanilla extract
Whisk and sprinkle on the streusel with a Tbsp. Chill. Cut in 16 bars. Better made the day before. Can be frozen.
