2 cups flour (use all-purpose or bread flour – different results but both are nice)

1 pack dry yeast

2/3 cup tepid water

1/4 cup olive oil

 

Warm the water. Whisk the yeast in it and leave for 5 mn at room temperature.

Combine with the other ingredients and knead with the dough hook of the kitchenaid for 2 to 4 mn or until smooth and elastic.

Cover and set aside in a warm place for 15 to 30 mn, until the dough has doubled in size. For the warm place, preheat your oven to the minimum temperature for 10 mn then switch it off.

Knead and roll out on a dusted surface.

Top with your favorite ingredients.

Bake for 20 mn.

 

My favorite ingredients? To me, nothing beats a pepperoni pizza though I do know there are other nice combinations.

Tomato sauce with basil is a staple but you can also use pesto or heavy cream with a dash of freshly-grounded white pepper. Top with mozarella, goat cheese, cheddar... Add dried herbs like oregano and your choice of sausage, sliced ham, prosciutto or cooked veggies.
