Burger and Hot Dog Buns

Don't get me wrong. Store-bought buns are fine, especially on a busy work week. But when I have time to bake, I much prefer these. They're adapted from many recipes I browsed on the net. I made one small batch at first and everyone liked them – which in my house is a miracle – so now I make batches regularly and freeze them.
Thaw them in the morning for lunch and you will either have burger buns, hot dog buns or you can even make smaller ones that will be ideal to make yummy sandwiches to take to work.
For 12 large buns:
1/2 cup water
1 cup milk
1/4 cup butter
4 and 1/2 cup all-purpose flour, sifted
1 pack yeast
2 Tbsp white sugar
1 and 1/2 tsp salt
1 egg
Mix the yeast with one Tbsp warm water and let sit for 5 mn.
Warm water, milk and butter in a saucepan. Blend.
Mix sugar, salt and 2 cups flour. Add the yeast then the saucepan mixture. Knead with the flat hook of the kitchenaid. Add the egg. Knead then add the remaining flour and knead 8 more mn.
Divide in buns on a dusted surface, either round or long ones.
Place on a baking sheet, cover and let rise for 30 mn in a warm place (oven preheated for 15 mn on its lower temperature then switched off will do the trick). Brush with milk to make them shiny. It also helps if you want to add poppy or sesame seeds on top.
Bake for 10 to 12 mn at 400°F. Cool on a wire rack.
Freeze them in bags and thaw them for a couple hours before cutting and toasting.
