For 4 servings and one cup of hollandaise sauce:

 

2 tomatoes, sliced

bacon

salt and pepper

Cook for 2 mn on each side. Keep warm.

 

English muffins, toasted (see recipe in Breakfast)

eggs, poached

 

To poach the eggs, break them in a sieve then gently slide them in a small pan of boiling water. Turn gently with a Tbsp.

 

7 Tbsp butter, melted and cooled

3 large yolks

1 Tbsp lemon juice

salt and pepper

 

Blend the yolks and juice for 30s. Whisk in the butter and seasoning. Keep warm.

 

To assemble, put the ingredients in this order: muffins, sauce, tomatoes and bacon, eggs, salt and pepper, sauce.
