Red Lobster Biscuits

I recently heard that Red Lobster might have to close. I was like – what?! You've got to be kidding me! I love the place, for cryin' out loud. Sorry, spent too much time watching Stargate SG1 recently ;)
Anyway, I love their biscuits and shrimp too (see recipe in the fish and seafood section) so I browsed the net to find copycat recipes and this is what I came up with. It was adapted from Kara Cook.
For 8 big or 10 smaller biscuits:
batter
2 cups flour
2 Tbsp baking powder
3/4 tsp salt
1/2 tsp garlic powder
1 Tbsp sugar
1/3 cup shortening
1 cup shredded cheddar
1 cup milk
glaze
3 Tbsp butter, melted
1/2 tsp parsley
1/8 tsp garlic powder
1/8 tsp salt
Don't overmix. The mixture is not really thick. Spoon the mixture on a baking sheet with a tablespoon. Bake 13 to 15 mn at 425°F. Cool 5 mn on a wire rack.
Brush with glaze while hot. Serve immediately or reheat in oven.
These biscuits can be frozen and thawed directly in the oven or left to thaw at room temperature for an hour than warmed in the oven. Do not use the microwave though or they'll get quite soggy.
