This feta spread is easy to make and can be used for dips or bruschetta. Serve it with prosciutto and you'll have a nice and easy dinner on a summer night.
1 cup feta cheese
1/2 yoghurt (or more depending on how thick you want you mixture)
garlic powder
paprika
oregano
1 Tbsp olive oil
Mix. Use it for dips or to spread on bruchetta bread with roasted veggies on top. I usually buy frozen grilled veggies (zucchini, eggplant and bell peppers) but they can be made very easily by slicing fresh veggies and brushing them with olive oil. Sprinkle them with salt and pepper and oregano or thyme and leave them for 15 mn at 400°F in the oven on a baking sheet.
Frozen leftovers for the feta spread can be thawed in the fridge overnight.
