Blackberry Feta Salad

It's the time of year when we find heaps of red fruit on the marketplace. Sigh. My favorite time of the year.
Don't miss it. It doesn't last long. You'll have plenty of time to use frozen ones in muffins and pies but right now, eat them fresh and why not use them in a salad?
Salad she says, uh? Who eats salad, anyway?
Well, I do. Not the boring type though. No, Ma'am! But if you add fruit to it, I'm all for it.
Balckberries add taste and color and go really well with cheese.
For this fresh and easy salad, you'll need:
fresh blackberries
feta, in cubes or crumbed
mixed salad or spinach
almonds, broiled, or any kind of nut you like
For your dressing:
balsamic vinegar
salt and pepper
walnut oil
And that's it!
Now, if you happen to have a few blackberries in your batch you're tempted to use in muffins or pies because they don't look perfect or are too ripe, you can. Or you could add them to some balsamic vinegar in a small jar. Next time you make a salad, try it. Balsamic is good but blackberry balsamic is heavenly!
