Dark Chocolate 300 grams

Pistachio 30 grams

Nuts 30 grams

Hazelnuts 30 grams

Raisins 30 grams
UTENSILS :

Piping bag

Spatula

greaseproof paper

thermometer

scrapers
STEPS :

to cristallize the dark chocolate : melt 200grams of chocolate at 50°c

After, put 100grams of chocolate on the melted chocolate, then mix both chocolates
-
let it cool at 28°c
-
warm up the chocolate at 30° / 31°c

use the piping bag to make discs or squares on a sheet of greaseproof paper
-
finally, put little bits of dried fruit (raisin, nut, hazelnut and pistachio - one of each) on this disc or square of chocolate,
-
put in the fridge,
