INGREDIENTS:

 

  • Dark Chocolate 300 grams

  • Pistachio 30 grams

  • Nuts 30 grams

  • Hazelnuts 30 grams

  • Raisins 30 grams

 

UTENSILS :

  • Piping bag

  • Spatula

  • greaseproof paper

  • thermometer

  • scrapers

STEPS :

 

  • to cristallize the dark chocolate : melt 200grams of chocolate at 50°c

  • After, put 100grams of chocolate on the melted chocolate, then mix both chocolates

  • let it cool at 28°c

  • warm up the chocolate at 30° / 31°c

  • use the piping bag to make discs or squares on a sheet of greaseproof paper

  • finally, put little bits of dried fruit (raisin, nut, hazelnut and pistachio - one of each) on this disc or square of chocolate,

  • put in the fridge,
