TITLE:TAJINE OF OLIVES

Time: 20 min for the preparation and 1h30 to bake.

      INGREDIENT :
  • 2,5 cups of lamb 33 tbls of pitted greens olives
  • 1 ognion
  • 2 garlics
  • 2 tbls olive oil
  • A pinch of cinnamon
  • A pinch of chilli powder
  • A pinch of ginger
  • Parsley
  • Coriander
  • 22,5 tbls of water
  • Salt and pepper

      PREPARATION:

  1. Heat oil in a large heavy-bottomed pot over medium heat.
  2. Add onion and garlic.
  3. Cook for 2 minutes or until onion is softened.
  4. Add the cinnamon,chilli and ginger.
  5. Cook, stirring, for 1 minute or until it is fragrant.
  6. Add the lamb. Stir.
  7. Add 4 cups of cold water and bouquet filled.Cover Up. Bring to boil.
  8. Reduce heat to low. Simmer for 1 hour.
  9. Meanwhile, blanch the olives in boiling water 2 times, changing the water.
  10. After an hour of cooking, add the olives and simmer for half an hour until the sauce reduces and the lamb is tender.
  11. Serve the lamb tagine with olives hot sprinkled with chopped coriander.

Why I propose this recipe? Because it's a dish I eat when I was very young.

It's an Algerian-Moroccan food , is often cooked in weddings as much than home.
