My recipe of the Tajine of green olives.

- 2,5 cups of lamb 33 tbls of pitted greens olives
- 1 ognion
- 2 garlics
- 2 tbls olive oil
- A pinch of cinnamon
- A pinch of chilli powder
- A pinch of ginger
- Parsley
- Coriander
- 22,5 tbls of water
- Salt and pepper
PREPARATION:
- Heat oil in a large heavy-bottomed pot over medium heat.
- Add onion and garlic.
- Cook for 2 minutes or until onion is softened.
- Add the cinnamon,chilli and ginger.
- Cook, stirring, for 1 minute or until it is fragrant.
- Add the lamb. Stir.
- Add 4 cups of cold water and bouquet filled.Cover Up. Bring to boil.
- Reduce heat to low. Simmer for 1 hour.
- Meanwhile, blanch the olives in boiling water 2 times, changing the water.
- After an hour of cooking, add the olives and simmer for half an hour until the sauce reduces and the lamb is tender.
- Serve the lamb tagine with olives hot sprinkled with chopped coriander.
Why I propose this recipe? Because it's a dish I eat when I was very young.
It's an Algerian-Moroccan food , is often cooked in weddings as much than home.
